I haven't had any problems with it and even let my bread sit and rise in the bowl and then turn it on low to knead the bread! I have used it mostly for bread and stiff dough and as long as you keep it on low and don't get in a hurry....it doesn't even heat up? I have made dough for pretzels, regulat white bread, pizza dough, and even wheat bread "which seems to get the thickest and stalls it a little more, but has been doing just fine for me! Just don't make the mistake that I did on my first one and try to do butter and walk away for a min or two because the butter will turn out of nowhere and splash all of the cream or whey out "even with a towel over it" and if it gets under the unit...it will suck up into the fan which is right under neath the unit about a 1/4 of an inch from the work surface and will suck up into the motor and burn up or short out the unit! But other than that...I have made about 50 loaves of every kind of bread you can make in the last 3 or 4 weeks and use it daily, sometimes 2 or 3 times a day and I have no problem! Yes a cover and maybe a little more power would be nice, but I can make 2 BIG loafs of any kind of bread in it and I have had no problems, just do the dough on low to #2 until it gets thick and turn it down to low, let it rise and put it back on low for 5 mins to knead the bread! **Q: whats the bowl capacity** A: 0.924 of a gallon. So almost a gallon. **Q: does it tilt up** A: Yes. it tilts for adding ingrediants & changing blades. **Q: Does it tilt?** A: No... There is a button on the side that allows you to raise the top up. She, of course, wanted a Kitchen-Aid, but for her needs this is a great little mixer. The good- Price!!, ease of use, mixing bowl, dough hook and whisk are stainless steel, fairly strong motor, easy to clean. the bad - all plastic body is so so quality, (but if you use it gently, it is fine), mixing blade is hard plastic (but works fine), would be nice to have a few more speeds, This is a very good stand mixer. I think that for the price it can't be beat. As stated I bought this for my daughter, who absolutely love it! We'll have to see how long it lasts as she is using the crap out of it and I have gained 5 lbs since I got for her. But she is a great baker. This machine work fine, has a strong motor, and for cakes, pasteries, cookies and the like it works great. I can see how some people have complained about the machines ability to mix bread dough (I would not recommend using it for that often) but it will get the job done, if you use a little care). It looks great, works fine (so far) and she has not had any issues with it so far. The "fold" in feature, left you manually pulse the motor to "gently" fold ingredients, it works, its more a marketing gimick then anything else, becasue you can just start and stop any other stand mixer in the low speed setting and get the same results. It will move around with a heavy batter or dough, but the suction cups keep the mixer for running all around your counter. As it is make of plastic it will shake rattle and swing with heavy batters and dough at high speed. overall, for the price this a pretty good stand mixer to get the budding baker, or if you don't need a heavy duty one for normal general baking.
