By no means it tastes like regular pasta...it's kind of slime and has almost no taste to it but if you're a volume eater or on a cut it's a great choice. I like to use in any Asian inspired dishes along with a regular rice noodles. It works perfectly for any kind of Asian inspired soups as it mixes well with rice noodles. For Italian inspired pasta dishes, ehh you will feel more of a difference in texture. I believe it's easier to get used the taste being gluten free (as myself) as your tastes buds are used to different tastes and textures. My husband is not gluten free he cant get passed the texture.
