This honey is perfect, to my taste -- a soft but clear floral lavender note that shows up even when the honey is used in recipes, but not too strong for spreading on hot buttery biscuits. It's become my favorite honey by far. My jar wasn't crystallized, but more like a loose honey-cream rather than liquid and translucent. That's fine with me -- almost any honey you keep in AZ starts to lose it's liquidity before long anyhow; you just set the jar in very warm water and it liquifies.
