The hopper is quite small. For cheddar I use the Microplane Professional series, extra coarse, which produces larger shreds. I haven't tried the other Microplane graters, though the medium two-way grater sounds interesting. I like these much better than a box grater, slips easily into dishwasher. I also strongly recommend spending just a bit more for the Professional series with steel handle. **Q: would this work with soft cheeses like mozzarella ?** A: Hi there, I don't think so. It is great for hard cheeses and makes it very fine. I think Mozzarella would clog it up. **Q: Can this be put in the dishwasher?** A: I did put it in the dishwasher the one time I used it. It survived the experience but not so much my cheese . I found it difficult to grate hard cheese . **Q: My drum is old, can I get a spare drum for this?** A: Im not sure, mine is brand new.
