It will clump weather in the fridge or feeder, however, it breaks and crumbles easily. **Q: Would this cheese melt, say, for an alfredo sauce?** A: this is a dry "cheese" I think you would be better of with different cheese substitute. There are cream cheese substitutes that would work especially if you added garlic and herbs etc. I make a cultured cashew "cheese" It comes out with the texture of sour cream. It's perfect for an alfredo sauce. Soak the cashews overnight, rinse them very well. Put them in the blender with as little water as possible. Blend til it's super smooth. Blend in 1/4-1/3 cup of chickpea miso. The miso will culture it. Put it in clean jars, fill up 1/2 way since it expands. Important that the jars are airtight. Put in a dehydrator and heat under 110 degrees. Heating over 115 degrees with kill the culture. Most ovens won't work because the temperature is to high. If you don't have a dehydrator put it in a hot sunny window sill, or next to the wood stove, or on top of a regular stove as long as it doesn't get to hot. It takes about 24-26 hours for it to puff up. It should culture within 2 days otherwise there wasn't enough miso in it. If everything works out properly it will get thicker with little holes in it because it gets aerated.
