This is a boning knife you would likely see being heavily used in professional kitchens where performance and safety are the key elements for knife use. In addition to this 6" model, I also own the 8" model which is a virtually identical design and also my favorite longer filet knife. Mercer has clearly identified the needs of chefs in their products, and ensured that ergonomics, performance, and construction meet the needs of the most demanding chefs...all at a price that is almost an unbelievable value! I have never been able to break down a whole chicken as fast and easily as I have been able to do with this knife. Forget looks and impressing your friends.
