I preheat my dutch oven to 500Β°F, then turn oven down to 450Β°f when the loaf is added.** A: I use for sourdough all the time. I do not have it in the pan during the preheat, though. The mat is not sturdy so I use both with the handles across from each other. They are beginning to discolor, other than that they work fine. I like not having to buy parchment. **Q: What is the max temperature these can be used. I bake sourdough bread at 450 degrees.** A: I used them to make sourdough also. I was concerned that the straps might melt between the lid and pan being in constant contact for 20 minutes of the baking time. It didn’t effect them at all but I won’t use again. They are too flimsy (I even used 2 at once). The bread also touches the side of the pan and sears instantly preventing oven rise at that spot. I was hoping to save on parchment paper, but these aren’t the answer for me. They will survive 450Β°, good luck to you. **Q: My dutch oven is 6" diameter on the bottom. Will this work in my pot?** A: My dutch oven is 6 1/2" and it works for mine. You just press it into the bottom... there may be a few "wrinkles" around the edge, but my bread doesn't show them. I suppose you could also trim the mat to fit your dutch oven.
