You will have larger quantity of rhizome from Alpinai Galanga for cooking. Main species of Alpinia Galanga used as a cooking spice, mainly for curries and soups. It is famous and well-known for Thai cooking use. It has a ginger-like hotness but a sweetly aromatic flavor that is, actually, the predominant flavor in good "Tom-kha" soup.
