They require a steeper angle for sharpening that this sharpener cannot provide. At best, you'd be taking off the entire edge and replacing it with a non-hardened western-style edge. At worst, you'd be destroying your knife. **Q: Can this be turned around for a left handed person to use? Or do the blades only go one way..** A: Yes, it can be turned around. It also has marks on the second side for a left handed person. **Q: Can you use his for scissors?** A: There are two styles. One has a slot on the bottom for scissors. It looks entirely different than the pic. in the ad. You have to click where it gives you a choice of 3 or 4 slots. I don't think many or anyone apparently saw that part. Look and see. I am not saying that its good. I am just saying the other model claims to sharpen scissors. I don't know which sharpener I am going to buy. I would be nice to be able sharpen my scissors though. ciao **Q: Can i sharpen a hatchet? Say a machete width blade.** A: I believe most hatchet's blades would be to broad to effectively fit into the 'V-groves' of this blade sharpener. Needs lot of patience since it's takes time. The quality is really good. Efficiency is good. Performance is okay.
