It's gluten free and you can't even tell! It is only herb seasoned -it contains nutmeg- I recommend using beef broth or chicken broth or turkey broth in place of water if you want your stuff to be beef or chicken or even turkey flavored herbed stuffing. 1 box makes a lot of stuffing. The directions calls for half a box to be used at a time. Half a box does an 8"x8" tray. 1 whole box does an 8"x11" tray. I also recommend to keep in mind that you follow the directions. This stuff is not like your everyday stovetop where you pour in the water cover for 5 minutes and it's done. The directions say to stir until moistened and all water is absorbed. You have to do that otherwise your bread cubes on the bottom will be mushy and the bread cubes on the top will be hard. If some of your bread cubes are a little firm and not moist after stirring and all the moisture is gone, You just simply need to cover the dish for about 5 minutes. Make sure you stir gently with a large spoon or fork. Too much messing with the stuffing will leave you will mush and your cubes will be broken up. Again, THIS STUFFING IS THE BEST!
