## Description

JAMAICAN CALLALOO Also known as Amaranthus cruentus or "edibleleaf amaranth," callaloo grows as an annual in the U.S. and is harvested for its leaves and seeds. The leaves are very nutritious, rich in protein, iron and vitamins and have an excellent and distinct flavor amaranth also it has two times more calcium than milk. This heat-loving plant grows from seeds sown in sunny, well-drained soil during the early spring, soon after the final frost of winter. The deep-green, edible foliage of the plant gives way to showy, Brown blooms that look magnificent adorning a flowerbed. The edible parts of the plant are low in saturated fats and contain beneficial nutrients such as protein, lysine and fiber.

**Q: Is this product just the seeds where you have to grow yourself?**
A: Yes.

**Q: How do you cook this Jamaican Callaloo?**
A: It's easy. It is similar to the American collard greens. Wash the callaloo by pouring some salt in the water.  This is to remove bugs and dirt. Rinse in 5 mins.  Then strip the stalks of callaloo .  Stalks have s film that can be stripped off.  Chop up stalks and leaves in small pieces./chunks. Then place chopped callaloo in pot.  Put callaloo to steam for about 20-25 mins.  Adds bit of butter, a little cooking oil, a little seasoning salt black pepper. Chop up onions and tomatoes. You can add a bit of salted did fish (put to soak over night) or chop up bacon or ham to add to the pot. Allow to steam for 20-25 mins. Serve with what ever you like. Can also be used as stuffing in fish.
