It is very difficult to hydrate liquid lecithin which loves oil. Powder soy lecithin loves water, so a great option for oil-in-water formulations. I was amazed at how quickly this hydrates! I used 3% in my face cream formula for emulsification purposes (paired with xanthan gum for stability) so I added the powder to my water percentage separately and mixed with a high speed/shear frother. Recommend this over granules! My emulsion is holding strong (don’t skip broad spectrum preservation!).
