I found out about it after running into a lady in the "gluten-free aisle" in the grocery store. She told me that it is the best cup-for-cup flour that you'll find and she was right. It is so good that I can't seem to tell the difference between it and the regular wheat flour. I still have to put it to the ultimate test in making my mother's pierogies. I attempted to make them using another gluten free flour composed of garbonzo beans and potato starch and the consistency was awful. While they tasted okay, they were just too thick and chewy. I am hoping since Domato is made of rice flour and corn starch that it will produce a lighter product. Not too terribly bad, but just be ready for it. Overall, adequate, if you can't have wheat or gluten for any reason.
