I had it in the oven up to 400 degrees. **Q: What type of oil do you to season** A: Canola, corn, vegetable, peanut, even butter, lard, or spray on no-stick. The most important part is to "seal" it, actually seasoning it. To confirm it's "seasoned", after using an oil of some sort, even before using it to cook with the first time, bake it by itself at 350 degrees in an oven or grill for about 30 minutes. If it has sheen to it, it's seasoned. If used properly, make sure it's hot before you start cooking, there's no worry about sanitation. Once seasoned cast iron is more non-stick than any of the high dollar no-stick coatings (usually doesn't last past the first "searing"). With cast iron you can use metal utensils on it instead of flimsy plastic or nylon. It's not hard but take care of it and it'll take care of you, never use soap to clean it, steel wool or scrub pad is best., there is no substitute in the best flavor for cooking with cast iron. Then I did a dumb thing. I put some sausage in it and walked off. I didn't forget it on purpose, but I did forget. It was a bad idea. However, I turned off the fire and waited for it all to cool. I scrapped off what was left of the sausage. Washed it with plain water and put some oil on it. Good as new after ten minutes of work; might be even better.
