The meat is tough, but not so tough that it's inedible. I've seen reviews that say it's "powdery." I'm not really sure what that means. It does seem to crumble a bit as you chew it, but that's only because it's very dry. These are qualities that I want in beef jerky. I want it to be tough and dry so that I can chew on it and take my time, as opposed to just devouring it like I would any other food. The flavor is a bit spicy (but not burn-your-mouth spicy), with a sort of lime undertone. It's honestly perfect. I've had jerky that was near flavorless before, and I've had gas station brands that taste like they're more filler than actual meat. This is neither. It's very flavorful meat, with no filler ingredients at all. On top of everything else, the company is super friendly and helpful. I bought a different flavor in addition to this one (the classic flavor, in their big slab form), and wasn't really a fan. People's Choice discussed this with me via email, and we came to a resolution that we were both happy with. I felt like they had my best interests at heart throughout the entire process. I will absolutely be buying from them again.
