I don't see a organic seal** A: In countries like Honduras, pesticides are not in the budget - chickens are eating the bugs! I can tell you this. I have an amazing collection of green coffees from around the world. This coffee is one of my favorite! Trust me! You need to try this. Amazing is an understatement! **Q: The description states "farm: fincanextlalpa" but the bag says the farm is "cascada jaltenango community". why the difference?** A: Farms are usually part of a larger community of farmers. Its like having an apartment in a building. You're all together but sorr of separate. However when the @#>$ hits the fan you support each other. (In theory) **Q: How can I ensure this coffee is organic? Also, is it mold and mycotoxin-free?** A: As for the Organic I have no idea. However your roaster should kill off any mold IF there is any on the green beans. Generally the roasting process will burn off any foreign debris or natural objects in the green beans. This is one of my favorite beans to order, in my experience they've always been good quality. **Q: The details section lists the ingredients as "100% mexican xicotepec" but the bag only mentions arabica. which is right?** A: Honestly almost all beans grown for coffee are Arabica, these however are grown and harvested in the Xicotepic region of Mexico. Incidentally, this is one of my favorite beans to roast at home. Light, nutty and slightly sweet when roasted to a city roast. Saved me much cash since I didn't need to by roasted beans which are fifteen dollars a pound from local coffee roaster. I could make lots of cold brew too roasting only 1 cup of green coffee beans for one batch of cold brew.
