I think you would have better control with the stainless steel. **Q: how long does take to cool down to put away?** A: good question. i intentionally let mine cool slowly to reduce stress. it can be carried with gloves almost immediately, if careful. but about 30 minutes to put away in an open space and longer for a closet. remember, paper ignites at 451*. better to error on the side of caution. **Q: how big is the pie dia** A: The opening is 13.5" wide buy 2.25" high. The size of the pizza is also determined buy the size of the pizza peel you use.
