Used the stay on setting on the timer, and just timed them with my oven timer. The oil drips minimally down the front of the fryer when you set your basket to drain. Large fish fillets will fit nicely. I can put two in each side (to cook four at once). But the whole fish with the tail won't fit. I had to cut the tail off. As far as little stuff, I can make enough french fries for 5-6 people at one time. Oh, and if you want to remove the two baskets you can still cook like that.
