## Overview

Wyeast #4007 Malo Lactic Blend is a premium liquid culture designed for brewers looking to convert harsh malic acid into soft lactic acid. It contains a live suspension of Oenococcus oenii along with essential nutrients, ensuring a smooth fermentation process and superior flavor profile.

## Description

Malolactic culture blend isolated from western Oregon wineries. Can be added to juice any time after the onset of yeast fermentation when sulfur dioxide is less than 15 ppm. Use at temperatures greater than 55 deg F Contains a live liquid suspension of Oenococcus oenii grown in a sterile organic juice based nutrient medium. Malic acid reduction will balance and soften wine while enhancing flavor and aroma characteristics including vanilla and buttery notes. 4007 Blend (blend of ER1A and EY2d cultures) will provide rapid and complete malic acid reduction in wine over a broad spectrum of conditions. ER1A, an excellent choice for red wines, has been isolated for it’s tolerance to low pH coditions. Ey2D has been selected for it tolerance to low cellar temperatures. Malo-lactic conversion is generally completed within 1-3 months. Usage: The Malo-lactic Culture packages contain 125 ml of slurry. This provides the inoculation rate recommended by and for professional vintners for 5 gallons of wine. These cultures will convert malic acid to lactic acid over a broad temperature range (55-90°F). The Malo-lactic cultures will also perform over a broad spectrum of pH conditions. Inoculate wine that has completed or nearly completed alcoholic fermentation. Free SO2 levels should be less than 15 ppm. Basic instructions for the proper use of Malo-lactic packages: Shake package well, sanitize, and open. Add contents to 5 gallons of wine. Adjust to desired cellaring temperature. Monitor Malic Acid conversion monthly with paper chromatography or other methods. Best if Used by: This package is best when used within 6 months of the manufacturer's date when stored between 34-40°F (1-4°C). Older malo-lactic cultures that have been exposed to higher or lower temperatures may perform slowly.

Not sure if those fine bubbles were leftover CO2 from fermentation or if they were from the MLF bacteria, but anyway, they stopped after a week or so. I didn't monitor it to see exactly how long it took, but it was done when I checked it 2 months later. UPDATE: Have used this several times and never had it fail. It's nice because other malolactic bacteria cost a lot more because the packs are meant to treat up to 66 gallons. This is the right size (and price) for the average 6 gallon carboy. Malolactic fermentation greatly improves the acid balance and mouth feel of nearly all red wine. If you're making a red wine, chances are you'll want to do MLF and this is a good bacteria to use. Add it right after primary fermentation is complete.

A: It will do fine in red wine.

**Q: If I only need enough for 1 gallon now how can I split and store for future use?**
A: Store it in the fridge in the same packaging. It is good for about 6 months.

**Q: Mine arrived via usps priority mail but it was warm to the touch in the package. how soon do i need to use this for it to still be good?**
A: My yeast also arrived warm, and I immediately put it in the refrigerator. Approximately a month later, we use the yeast to make wine and it worked OK. Good luck.

**Q: What is the expiration date**
A: Use within six months of manufacturer's date.

Did the job, even in our cool (low 60s) basement. I saw very fine bubbles a few days after I added it. Not sure if those fine bubbles were leftover CO2 from fermentation or if they were from the MLF bacteria, but anyway, they stopped after a week or so. I didn't monitor it to see exactly how long it took, but it was done when I checked it 2 months later. UPDATE: Have used this several times and never had it fail. We have been making wine for years and have used malo-lactic culture from our local supplier previously. We had great success and wanted to use it again. We added this 2 weeks ago and nothing. It's a complete dud. The product does nothing, complete waste of money. Very disappointed
