Why? because the fish oil is very nutrious, Various omegas etc. However, the mercury content of many areas of the ocean are poluted and full of it. Also, what if like me, you do not like fish. Then fish oil is the answer. However, fish oil can also be full of mercury and other contaminants depending on where the fish where caught. Is Carlson's the safest--I don't know, but it is one of the safest as Carlson tests the fish and the fish oil for contaminants including mercury. The capsules are large but they can be swallowed easily with water or juice. The review asks for taste of capsules. I do not know why you would want to bite into them. However, for those souls who do that, they come in lemon and orange flavored oils.
