The flavor is like a symphony of tastes and I don't want to share my jar with anyone...(so I've hidden it away so nobody can get their hands on it)...I taste a hint of the lemon but it's not a strong lemon note...It's subtle...and light and this honey is so different from all the American honey I've bought. Sweeter. I thought I might use it for baking but it's too good to let it get lost in food. I really want to eat it right out of the jar...put it on toast...in my tea...and be able to savor the taste.
