So the great thing about Arrowhead is its full buckwheat flavor that comes from it being whole seed. Some buckwheat flour grinds only the groat. Since it's gluten-free, I add a tiny bit of white bread flour to keep my buckwheat cakes from falling apart off the griddle or when I flip them. There's nothing quite like old-fashioned sour buckwheat cakes made from this Arrowhead.
