They can provide a noodle-like base for your sauces and proteins but are very different in taste and texture from regular pasta. King Soba is the closest to traditional pasta noodles that I've come across. Despite the carb count of approximately 40 grams per serving, the glycemic index seems to be accurate in that I have not gained the weight I usually do after eating wheat pasta. Also, for some reason, the King Soba brand has a better taste and texture (firm, but not doughy or chewy) than the other brown rice pasta I've tried (Pastariso).
