The best way to check is to look at the pictures of the different sides of the box. Also, right on the box it says it is kosher for Passover which, as I understand it, means it is leaven free. **Q: What is the shelf life of this product? the only date i can find is passover 2017. it also says 18 crackers wrapped 2 packages not 3 in each box.** A: Depends on the facilities rotation process. I have purchased these on several occasions About a yr ago w/exp date is 2018 About a month ago w/dec 2017 Prior to this purchase ea. Box had 3 pkgs w/ 6 crackers This last purchase had 2pkg w/9 crackers **Q: Are these a uniform color? I plan on laser-etching the surface and want a good canvas.** A: Color is uniform with an occasional darker toasted edge. Sheets are rarely completely flat, however. I would guess that they have up to 1/4 inch of distortion. **Q: are you sure they are unsalted?** A: Yes I'm sure, they do NOT have salt. The box says "all natural, no sodium, fat free" and in the list of ingredients it says 0% sodium, ... in fact the only ingredients are wheat flour and water. To go even further, besides being kosher, they are also lactose free and vegetarian as well. And just so you know each 1 lb. box has 3 sealed packages with 6 pieces of matzos in each.
