The Dutch had no idea what they were or how they worked when I moved here 44 years ago from the UK but my Dutch husband quickly learned how tender meat cooks and how easy preparations for a family meal was. Lamb, beef and chicken are especially soft to eat and Irish stew or a hot-pot following my mum's recipe from 65 years ago can't be faulted! I purchased a Crockpot with a hinged lid over 5 years ago thinking this was a great move forward especially trying to keep the kitchen counter clean or not dropping said lid when trying to turn it up-side-down when it rested on a round knob - wobbly and not very safe! The holder for the hinge on the lid has now come loose on one side twice and although it's repairable (I hope), it will take me the best part of a whole afternoon to do as I have to disconnect all the wiring inside in order to get to the 'hole' where the screw passes through to the plastic holder on the outside. As it's now become loose twice tells me that the hole for the screw is too large. I therefore decided to go back to basics and purchased a 'normal' crockpot (colour to match some KitchenAid machines on the counter ! ) but now with an additional lid holder selling separately for just €11,00. A great shame I hadn't found the lid holder 5 years ago as this would have saved money and import duties - the hinged crockpots are twice as expensive as the regular ones and I couldn't find a Dutch seller so had to purchase from a UK seller and pay extra customs fees. Ho comprato questa pentola che è arrivata imballata nella sua scatola ben protetta e l'ho subito provata con un arrosto di manzo che ho prima massaggiato con la senape e le spezie varie per poi tenerlo una nottata in frigo. Il giorno dopo ho dato il via alla cottura lenta, prima una rosolata veloce in padella su tutta la superficie e poi nella pentona Crock-pot per ben 6 ore, con la carne adagiata in 250 ml di brodo di carne assieme a cipolle e carote a tocchetti. Durante la cottura si sprigionano profumi che non avevo mai percepito con le altre cotture e terminato il tempo ho misurato la temperatura della carne con il sondino e l'ho estratta. Si sbriciolava con lo sguardo nonostante fosse compatta e ben strutturata, il sapore ha mandato in tilt le mie papille, mai provata una cosa simile ma soprattutto ho finalmente cotto un arrosto come si deve, senza contrasti tra superficie e interno e ottenendo una morbidezza inaspettata. Vi consiglio di cercare nei vari siti (pochi in italiano, in verità, uno è ricetteslowcooker.it) che propongono le ricette con pentole slow cooker (che è cosa diversa dalle cotture lente al forno o con il Roner) e provare a fare quello che vi piace e vi auguro di rimanerne entusiasti come è capitato a me.
