When I bake in my Emile Henry cloche, I do not preheat it. I let the dough rise covered inside and score it before putting into the oven. I will do the same with this cloche. **Q: Baking bread in a Dutch oven causes the bottom of the loaf to be tough and chewy. Does the same thing happen with the bread oven or is it more even?** A: I made about 15 loaves in my Le Creuset bread oven over the past few months. The top and bottom’s crust are supposed to be crispy but not burnt. You may be at a higher temperature than you expected or have baked it too long if the bread is too crispy or burnt. **Q: How big of a a loaf can you make with this?
