They are very small so I expect they will be very hot, perfect for the dishes we make. Amazed how good they look, recommended to everyone! Update 06.26.23: These chilis work just fine in every dish we've used them in. Good flavor and sinus-clearing heat but not stupidly, unpleasantly hot. I planted seeds from these chilis a few weeks ago - got a dozen seedlings now growing under lights that're getting quite leafy. These are good chilis. Last a long time/ **Q: Are these "prik haeng"? I want to use them to make a red curry paste from scratch.** A: They are extremely hot so making a paste from them is probably not a good idea. I make single serving green curry dishes and I crunch up one and add it in. Just one adidas a ton of spice. These are hot peppers like you would find in Kung Pao chicken. **Q: What kind of pesticides if any are used on these when they are grown?** A: I don't know as I did not grow them.they are imported from southeast Asia. I wouldn't think pesticides would be needed with a chili packing that much heat. I have grown cayenne peppers and did not need any pesticides as the insects did not seem to be interested in them,,,I assume because of the heat and acidity of the peppers. **Q: Can anyone tell me if these are thin skinned/brittle which would be good for a dry snack mix?** A: If you like and can handle really hot food, I guess you could use them as a dry snack, but even then, I don't know how many even the Indians from Calcutta can eat as a snack--not dozens I am sure. Potato chips these are not.These peppers are used mostly for cooking where I might use 8 dry chilies in a dish for 6 or 8 people. For average American taste only 2 or 3 for that size dish. Not a lot of bitterness that you usually get with dried chilies. They came vacuum packed and we're perfectly dried, not brittle like most supermarket chilies are. Perfect for a quick snip with your scissors into your favorite stir fry. Without much experience with Thai chilies outside of eating Thai food I would give these a 9.5/10 in terms of quality. They really elevated my chicken Thai basil stir fry to that next level.
