With regards to the vinegar, it reminds me of the experience that we have had with Kona coffee beans. IMHO, Kona isn't expensive because it is the best coffee in the world. It is really quite subtle, has a punch but lacks the strong flavors that other quality coffee beans have. Kona is expensive because it can only be grown in small, remote sections of some of the most expensive real estate in the world. After trying this DOP Balsamic Vinegar, would have to say that the flavor is more subtle than other 25 year varieties that we get locally. It is very smooth and might remind you of an aged port dessert wine.
