For ice cold water it measure at 0.5 C, which is within its accuracy rating of +/- 1 C. For the boiling water it measured at 98.6 C but I wasn't actively boiling at this point and the temperature was dropping slowly. I would say this unit keeps its promise of +/- 1 C, which is accurate enough for most cooking applications. For the cold water, the temperature adjusted slowly over 1-2 minutes before it finally settled at its final temperature. I had left the ice water sit for a few minutes so it should have been adjusted by then but maybe it was still cooling slowly. For the hot water, it went much quicker, which will likely be the target use case anyway.Overall, its a nice little unit. It's not the sturdiest so you'll have to be cautious and make sure it doesn't get bent.Plus the battery compartment is easy to twist off, which can result in a loose battery connection. Its a cheap unit and it shows, but it'll get the job done.
