Once the oven comes to temp and the dough is ready to go in, I pour water onto the rocks, launch the dough on a baking stone and immediately close the oven. The stream created during this process helps the dough spring while slightly delaying a crust from hardening, alerting the bread to rise a bit more during the “oven spring” phase.
