We are not gluten averse, so we're not compelled to approach GF food products with resigned acceptance of the typically inferior outcome. We have often experienced inferior taste and texture and, unlike folks that are gluten intolerant, are free to practice avoidance moving forward. No need for avoidance with this flour. We thoroughly enjoyed our pancake breakfast - not because it replicated a typical preparation using wheat flour - but because it was a delicious pancake in its own right with rich, clean flavors and a satisfyingly light and toothsome texture. We will experiment with other uses when the need for flour pops up whether it's cookies, a roux, a tempura batter, etc. It will be top of mind if rice flour is in the recipe. I have used it for a range of baking needs and it always works. Most recently I made the pancake recipe on the back of the flour packaging and hazelnut chocolate eclairs from a recipe shared on the Gluten Free Farina website. Both turned out great! (See photos.) I have never made eclairs before and was able to make a pastry that puffs up beautifully.If you are looking for a flour that's versatile and provides you with amazing texture, this is the right product for you. The posts are very informative which is helpful for a novice baker like myself.As a final note, I also purchased the Gluten Free Farina guar gum and it works great in combination with this flour.
