A: Mine doesn’t taste sour, but it is a bit bitter , raw cocao, as opposed to sweetened and processed cocoa often used in baking so perhaps that’s what the difference is.

**Q: Is this tested for heavy metals?**
A: google heavy metals in the powder

**Q: Is this non-alkalized cocoa?**
A: Alkalized cocoa is washed in potassium to get the ph to a neutral 7, so..... no, this brand's cocoa is not alkalized and would be a ph of around 5.

**Q: Is it made from criollo beans, and have the 3oo nutrients including anadamide and phenylethylamine?**
A: Our certified organic cacao in this product is sourced from Peru, which cultivates mainly Trinitario, Forastero and Criollo cacao varieties, but we do not specify a single cultivar so it can be any or all of those. We don’t ID or quantify those two specific components in our organic cacao powder.
