I have a nice assortment of cast iron and stainless steel, but need a few enamel pans for cooking acidic sauces such as tomato base ones. The enamel looks like ceramic but it’s not non stick like ceramic. It works great as long as you pre heat the pan and use some fat. Medium high heat (6 out of 10) is more than enough to cook anything you want. It spreads the heat out evenly and retains the heat well. Cleans easily after a few minutes soaking in warm water. The enameled bottom is perfect for my glass top stove. (I scratched the stove-top with my non- enameled cast iron skillet ) I purchased a generic 10.25” lid for it when I bought the skillet but the lid was just a little to big. Oh well, easy return.
