I've tried a few and this one is the closest to taste and texture of normal pasta. It didn't have an odd flavor, and it didn't fall apart. It did seem like I needed to cook it just a bit more than usual though. But it's worth it though. I really couldn't tell I was eating low carb macaroni and cheese. Unless there's a better option out there, this is probably the closest you can get. To go lower carb and calorie, you're probably going to need to look at hearts of palm noodles.
