They are hand-picked from our vistas of olive groves in the wind swept countryside outside of Salonica. These olives are selected for size and quality, inspected twice after the curing process. (And I've always wondered what effect the salt brine has on those plastic jars.) Most of the other olive brands I've bought over the years have way too much salt and no flavor - so you have to rinse or soak them just to make them edible.
