Review: Authentic and good - It's Ras El Hanout. What's not to like
Review: Interesting unique flavor - I ate at a Moroccan restaurant once, and loved the unique flavor (this reminded me of it, but it’s been so long ago it’s hard to remember).. I first time I sprinkled some on, and it didn’t work out. The second time I slow cook some vegetables, and it worked very well. BRAISE: ADD water, olive oil, butter moroccan spice (next time I will try some chicken stock, or a ham base broth).. (only enough water to initially/partially steam vegetables, and then evaporate). Heat & stir until the seasoning mix’s in to the liquid. Veg in enamel saucepan (1/2” water boiled about 5-minutes to steam,,, take lid off to let water evaporate).. Once enough water evaporates put the lid back on and slow cook for at least 20 minutes I think (for the flavors to permeate the vegetables). The vegetables will give up a little bit of water to add to the oils which makes a broth for slow cooking. Taste test, then when ready remove the vegetables, turn up the heat and reduce the remaining liquid.. IMHO, reducing the broth it’s like a secret weapon to make vegetables yummy. This will concentrate the flavors; taste test again, and pour the gravy onto the vegetables when it’s ready. Add salt, or whatever you like (chervil, parsley, etc.).. I think next time I might try a Fresh dollop of butter or a splash of olive oil.

It's Ras El Hanout. What's not to like
