If you're just trying to freshen your breath, one piece will do. If you really want to chew the gum, I use two pieces. I like the large 55 piece package verses the individual 12 pack when using it for myself, but if you plan to share with others, or take it with you, I can see where the 12 pack would be handy. I keep a pack in my car and at my desk, so I can easily freshen up. I have issues with aspartame, so have avoided a lot of gums for years.
