The flavor is a cooling, numbing & pine-flavored heat. The local shop adds szechuan peppercorn oil to their broth and I've been trying to find this stuff for a while. This oil is incredibly potent and you only need a few drops mixed in to your soup bases prior to cooking. It adds an incredibly complex heat to Asian meat & seafood dishes, but especially soups and ramens. Include some of this oil with some pepper seed oil, into rendered pork/chicken fat and szechuan chili flakes and you have a complex umami, cooling-heat flavor.
