My husband is diabetic and has kidney disease. He has to follow a low potassium diet. Most nuts are high in potassium and aren't allowed, therefore I can't use most nut flours (almond, cashew,etc.) called for in low carb recipes. Macadamia nuts are much lower in potassium than all other nuts and are allowed on his diet so I was beyond thrilled to find this distributor.
