I like the Gun Powder and the White Peony both on their own but there is something about them together. To me they just taste like they were meant to be that way. Since they both have about the same steeping time and temp it works out perfect as well.It is really important to get the temp and the steep time right with green tea, I think the white is more forgiving(?). I can stand to drink my mistakes when I over steep but I know the bitter was my own fault. I actually use my the digital meat thermometer when I heat the water and the timer on it when I steep. Might as well make use of it when it isn't in a turkey. Yea, I still let the steeping get away from me sometimes. I heat the water to 185F because it cools down when I pour it into the cold cup and steep them both for 2 mins in the same infuser.
