**Q: Can anyone recommend an organic sauerkraut that has live cultures?**
A: I think you'll find all sauerkraut in jars has been pasteurised to prevent further fermentation and stop jars exploding.....unless it's refridgerated.The best way to get sauerkraut with live beneficial bacteria is to make it yourself, it's dead easy. All you need is to shred some cabbage (organic preferably), add a bit of salt and knead it until it's juicy then stick into a jar for a month or six making sure the liquid is above the level of the kraut. There are lots of recipes on the web with all sorts of different veggies, just got to get the basic kit first and it's a doddle.

**Q: is this unpasteurised?**
A: Sadly, they are pasteurised. I used the jars to make my own. Very easy to do and delicious.

**Q: How !ong does this keep for? That tells you if it is pasteurised, because unpasteurised live saukraut has to be eaten within a few days.**
A: Raw, unpasteurised veg keeps for months as it is immune to mould and bacteria. It is also good for your gut whereas pasteurised has all the gut friendly bacteria killed off.

**Q: Hello, I just wanted to ask you if the cabbage is whole or chopped?**
A: Yes it is finely shredded as a typical sauerkraut, and great to just help yourself to a forkful or two from the jar, or to even warm it up with some sausages or bacon. I've bought this on several times now and it is of a very good quality.

This is a great product, especially as it is organic and is in brine rather than vinegar which defeats the object of introducing beneficial gut bacteria. However, the reason for not awarding it five start is that it is very watery. It is not generous with cabbage content. Barely provides three servings.
