Review: The ham carving knife par excellence! - This is a first class knife for slicing Jamon Serrano. Having received a gift of a ham for Christmas I was at a loss as to how to slice it properly. I did a little research and eventually discovered this knife. I had been told that the ham should be sliced very thinly and in short, 2 to 3 inch, pieces but that a very sharp, flexible blade was needed and great care was necessary in order to a) cut the pieces thinly enough and b) not slip with the blade and cut oneself. This knife delivers all of the requirements effortlessly! The blade is very flexible and razor sharp but is protected in a unique plastic/nylon guide that also acts as a guide and depth stop so that it is easy to slice very thin pieces. I heartily recommend this knife for anyone interested in achieving a professional job effortlessly.

## Questions & Answers

**Q: can the knife be sharpened and what is it made out of please.**
A: The knife consists of a plastic handle with a long thin metal blade which provides the necessary flexibility to cut the ham. The tip of the blade is squared off (slightly rounded) and fits neatly into the protective sheath/guide. My understanding is that the blade can be sharpened however I have not attempted to do this yet.

**Q: Does the knife come with a storage box**
A: Not sure what you mean by storage box but it comes with the white box that appears on the image and that might serve for storage (it is a carton box). Thank you.

**Q: Has anyone used this with smoked salmon? Is the blade very flexible when removed from the protector?**
A: The blade is fairly flexible but not whippy. I haven't tried it with smoked salmon but, thinking about it, that's a good idea. I suspect it would work very well.

**Q: By storage box I mean something to put the knife in after use, away from children's fingers, preferably made of wood.**
A: It is not a box...but for sure it is something that helps you for cutting your ham and not yourself! and also it is nicely protected by the plastic so it still helps if my daughter is around....

When this first arrived I thought it was useless and was going to return it. Once sharpened though...it is an excellent knife for the money, its a pity because it should be sharp when it arrives but I would still buy this knife again because its good quality. The knife guard....don't even bother trying to slice with it on, its a gimmick, however, its a very good addition to have to protect the knife when not in use.
