The other thing to consider is that this is really a 'Tool' sharpener, and is really for sharpening tools and knives that are to be used as tools. For sharpening more expensive or important blades, it would probably be best to go with an angled stone system, such as the edge pro or lansky. Don't get me wrong, this creates a nice edge, but the kind of blade you are talking about deserves something a little more accurate. **Q: Can you sharpen wood chisels?** A: Not easily; there is no guide for chisels. You could sharpen them freehand using a clamp, but this sort of shapener removes a lot of metal so, unless you are quite skilled, would leave you with with an undesireable uneven cutting surface. We did every type of knife that could be done and they all came out really good. It also does a great job on scissors.It sharpens quickly, maybe 5minutes a knife from pretty blunt to shaving sharp. Even very hard stainless steel knives sharpened quickly although won't hold and edge for long.It uses sanding belts in three grades, 80, 220 and 600. There are diamond belts available as well.
