However, I found that longer knives are better to do in two parts. The angles get smaller the further the hones are away from the jig that holds the knife. It is better to keep the angle similar throughout the process. Hence, better to break the job into parts. There are enough rods to set all the required hones up first, then get into the task of sharpening. A good product. I want to get beyond the 'normal' edge that you get when sharpening a knife or buying one new. To me, a knife - almost every knife - must be as sharp as possible, especially my penknife and my kitchen knives. You definitely don't want a cut from a blunt edge. The Ultra Fine hone gives the blade a really sharp edge. I then go on to a final edge using the Super Sapphire Hone which takes the edge into wickedly sharp territory and that's what I want (High carbon steels give the best edge but you can get a really good edge on most stainless steels). Cutting meat and vegetables is so easy now. Nothing Bostick all purpose clear adhesive can’t fix. Perhaps Lansky ought to use Bostick when they make them.
