I have done everything it says in the directions.** A: As someone who has made Irish soda bread for more than 60 years, I find that wrapping the hot loaf in a clean damp tea cloth, immediately I take it out of the oven, and leaning it at an angle against some kitchen container, until it is cold, produces a great loaf - the wet cloth softens the crust, These days, I use wet kitchen roll squeezed out.
