Texturally they are not the same as pasta. However, they are good at absorbing the flavors of whatever sauce you are pairing them with. It is not pasta, but it's the best zero carb substitute I have found. FYI, I find their Miracle Rice to be the best of them. **Q: Are these noodles low sodium?** A: the Miracle Noodles are made from Shiitake stem, not a chemical or man made ingredient, as such, no additives (sodium, or anything else) are included **Q: Are they anything like ramen noodles????** A: They have different textures than regular ramen or udon noodles, almost rubbery-ish.
