Review: This may be the best "smashula" alternative - Over the last several months I’ve cooked north of 300 burgers across big church cookouts, small groups, and a bunch of trial runs. It’s not magic with rock-cold, vacuum-packed beef straight from the fridge—that stuff is tight and fights you whether you’re using a press or a spatula. A press lets you lean with both hands, so it copes a bit better there. But the upside with this spatula is feel and control: you can see what you’re doing, manage the edge taper as you spread the patty, and make tiny adjustments as the crust sets. That experience is simply better for me than working blind under a press. On sticking: Motz’s spatula technique—warm the blade, light oil, drop the ball, let it get a small brown patch, then flip and smash—does make sense and helps.
