The first one, which I have just tasted, is most certainly a very passable cheese indeed.Paul takes you through each stage, with words of simpathy. It is almost as though he is there with you, step by step and stage by stage. He covers subjects like, the history, how to, what you need and what various ingredient do, and why?The book also includes, a huge variety of cheeses. Cheeses to suit all palettes from the mildest, all the way through to, potentially, the strongest.I cannot speak more highly of the book. Although, if I were to have any critisism, at all, then it would be that, there are no recommended suppliers or resources. As it turns out that booklet was far more detailed and helpful than Paul's. He does give a long description of cheese and the basics of making it and he does have a number of recipes but they are a little on the short side as far as what-to-do and why! In fact I learnt more from watching two YouTube videos on Stilton production than either book! One was Rick Stein's local heroes series & t'other was a Discovery on . . . they don't press Stilton!! Hmm, live and learn. It IS a good book for the novice and it may entice folk to "have a go" but he could have ditched all the menus for eating cheese in favour of more step by step detail of making the stuff. ### ⭐⭐⭐⭐⭐ 5.0 out of 5 stars Lots of variety *by A***R on Reviewed in the United Kingdom on 7 September 2020* Nice clear instructions, lots of recipes and different types of cheese to make.
