The 12" by 12" agaricus (white button or crimini/baby bella) kit weighs about 13/14 lbs. ~ This beginners kit comes with comprehensive instructions (including links to online instructions which include photos and videos to aid you on your growing journey), colonized growing medium block and the casing layer you mix and apply to the block. The box the kit is shipped in converts into its growing chamber. The mycelium within the kit is alive and growing. As such the kit needs to be treated like any living plant. The box needs to be opened upon arrival as it will need to breathe and you are instructed to begin the process within a week of its arrival. You start the process by following the instructions on mixing and applying the casing material provided. The mushrooms begin to emerge from 2-4 weeks after applying the casing as per instructions. Depending on the care given, during the following 3 to 8 weeks after the first flush of mushrooms have matured, mushrooms will be emerging. Typically with harvests every 5-10 days. No, that is not how it works. The substrate is completely colonized with white button myclium. When you flush the kit as per the instructions you set all the pins within the casing layer that have the possibility of becoming full grown mushrooms. Just like we can't re-flush a crop in our farm you can't "re-flush" a kit. It is a one time shot. Thank You Wendy **Q: How do you know if there are any bad mushrooms you can’t eat that grow in this kit?** A: Hi Min! Thanks for your question. This is a white button kit. The mushroom pins are bright white. There may be a pin that dies... in this case the pin turns dark brown and becomes soft/squishy - it does not grow. The other pins around it will be bright white and continue to grow - be firm. If a kit is over-watered or rH is high and not enough air exchange - there may be brown spots forming on the mushrooms. While it looks ugly, it doesn't mean that the mushroom is 'bad'. It just means that you should rinse/prep and cook before eating. To double check you can always send an email to the address on the instruction sheet - include a picture - and I can assist you with determining what is going on. I recently received an email from someone who forgot about their kit in the basement. When they went to check on it the white button mushrooms were completely open/flat and releasing their spores upon one another. The mushrooms were still firm but covered in a dark brown mushroom spore. All the mushrooms were perfectly fine to eat. They were just Ripe. Not picked 'green' like the white buttons you find in the store. When picking at our farm we are selective and pick the button mushrooms when they veil is stretching... just before opening. They are quite flavorful at that point. Ones that are open tend to have much better and more flavor than tightly closed. **Q: How long can you wait before activating the kit, ie. can it sit for a month?** A: No, it can not sit for a month. Please consider it like a living plant. It needs to be tended to and cared for immediately. We recommend that kits that we ship right now be opened upon arrival and started within 3 days. We ship out kits from a new crop every single Monday Morning. We take orders for that shipment for a weeks time. For instance: Orders placed between 8 pm Sunday November 14th and 8 pm Sunday November 21st will ship on Monday November 22nd. These typically land on or before the end of the week. When they land they should be opened and the half sheet of instructions inside should be followed to allow the kit to acclimate to the proper growing temperatures. Starting December 6th we will move to both Monday and Thursday shipping. As in the past when Christmas Eve lands on a Friday as it does this year, We will ship out orders that are received in every 24 hour period starting on December 15th through December 20th. So, daily on the 15th, 16th, 17th, 18th and 20th. Starting on the 21st I will look at the estimated delivery date to determine if I should ship. Since we are located in Southern Missouri, Central to pretty much all locations, most locations have arrival dates that are within 2-3 days.
