I've noticed a colored oil slick on the surface of a brew, but never to the extent where it is unpleasant. The freshest by date is the date that we recommend you enjoy your coffee by, however this is not an expiration date. If you're using a semi-automatic or more so, a fully automatic espresso machine, you may want to steer clear of "oily" beans as they may clog up a bit more. Try Lavazza beans as they tend to have a more matted finish. Even on their dark roasts (Simfonico and Gran Riserva), the beans are not as oily as Peet's or Starbucks (meh) beans. For Peets, Major Dickason's and Espresso Forte seem to be the less-oily Peet's beans, and the tastes are spot on. But do give those two Lavazza beans a try. You might like them. The price is right, the taste is usually quite good and the only possible downside is the older roast dates.
